Easy Gluten Free Apple Pie Brownie

My easy apple pie brownie is a perfect dessert for those that want both a brownie and an apple pie in one. A brownie crust loaded with an apple pie topping.

Do I want an apple pie, or do I want a brownie? I want both! So, why not put them together and enjoy an apple pie brownie as a dessert? Whenever I can’t decide on whether I want one dessert or another, I mix them up. This is just one of those examples. This two-in-one dessert is one of my favourites.

The Ingredients for Easy Apple Pie Brownie

The usual brownie batter ingredients, apples, and cinnamon are all that’s needed for this amazing dessert recipe.

  • Brownie Batter
  • 1 1/3 cup gluten free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cocoa powder
  • 1 teaspoon instant coffee granules
  • 1 cup butter
  • 2 cups granulated sugar
  • 4 eggs
  • 1 teaspoon pure vanilla essence
  • Apple Pie Topping
  • 4 granny smith apples
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon powder
  • pinch of salt
  • 2 tablespoons corn starch
  • 6 tablespoons water (divided into 4 and 2)

The Brownie Recipe

I love a dark chocolatey brownie and this is just that kind of recipe. To make it:

  • Add the gluten free flour, baking powder, salt, cocoa powder, and coffee granules into a bowl. Mix everything well and set aside.
  • Add the butter and sugar into a large mixing bowl and whip them together until you have a smooth mixture.
  • Add the egg and continue to mix until the egg is well dispersed into the butter sugar mixture.
  • Add the vanilla essence to the mix and again mix well so it’s evenly distributed.

  • Add the dry ingredients into the bowl and mix them together. You will get a dark chocolatey batter.
  • Liberally butter a pie baking dish and pour the batter into it. It will be thick, so you will need to spread it out so it’s evenly distributed onto the baking dish.
  • Bake in a 350 degrees F preheated oven for 30 minutes.
  • Once baked, remove it from the oven and let it cool down a slight bit.

The Apples for the Gluten Free Dessert

Making the apples is for me the most fun part. The smell of the cooking apples is the best part of this recipe. Let’s make the compote, while the brownie pie is baking:

  • Peel, core, and chop the apples. I like to chop them into small bite size pieces, but you can always slice them if you prefer.
  • Add all the pieces into a pan and add the sugar, cinnamon, and salt to the pan. Mix everything well, so that the sugar and cinnamon are evenly distributed.
  • Add 4 tablespoons of water to the pan. This helps add moisture to the apples.

  • Cook the fruit for about 3-4 minutes or just until it starts to soften up a little. Do not over cook. You want to be able to taste the slight crunch as you enjoy your dessert. I cook them covered so they soften a little bit faster.
  • Once the apples are almost ready, mix the corn starch and 2 tablespoons of water together.
  • Pour the corn start slurry into the pan and mix well. This will help the apples thicken a little bit. This is an optional step. You can always leave the compote as is.
  • Turn the heat off and allow that compote to cool down a slight bit.

The Assembly:

Now that the brownie and apples have both cooled down, we can assemble the dessert. Pour the apple compote onto the pie and gently spread it so it is almost evenly distributed.

I tend to leave the brown pie in the pan I baked it in, especially if I am taking it as a dessert to a friend’s place or a pot luck. If you are serving it at home, you can remove the pie from the baking dish before you pour the apples on it.

  • Or even with a dollop or two of vanilla ice cream.
  • I particularly enjoy it with a cup of coffee or my favourite chai.
