Delicious and Easy Apple Muffins

My easy apple muffins made with delicious Macintosh apples are not only delicious but incredibly moist and are spiced to perfection.

Fall brings apples and lots of them too. My easy apple muffins are one of our favourite snack recipes for this time of year. Each year, we go apple picking with the kids, but this year we skipped it. However, we had friends that brought us all kinds of apples. Fresh farm picked Macintosh are an all time favourite for this recipe.

Some fresh apples, some baking necessities, and a little patience are all that’s needed for this delicious snack.

The Ingredients List for the Easy Apple Muffins:

  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder 
  • 1 teaspoon baking soda 
  • 2 teaspoons cinnamon 
  • 1/4 teaspoon allspice 
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lime juice
  • 1/2 cup milk
  • 1 cup grated macintosh apples 
  • 1/2 cup pecans (optional)
  • 4 tablespoons demerara sugar for topping

The Apples for my Muffin Recipe

I love Macintosh apples for this recipe. They are tart and sweet all at the same time and are just perfect for my muffin recipe. To prep for this apple recipe:

  • Core the apples and using a box grater or a food processor grate them and set them aside.
  • I leave the peel on. It adds extra fiber to the recipe.
  • If you prefer, you can peel the apples.

The Batter

This has to be one of the easiest batters to put together.

  • In a small bowl, mix together the all purpose flour, the whole wheat flour, the granulated sugar, and the brown sugar.
  • Add the baking powder, baking soda, cinnamon, allspice, and salt to the flour and sugar mix.
  • Ensure that everything is evenly distributed.

In another bowl or measuring cup:

  • Add the egg and beat them well.
  • Add the oil, milk, and lime juice to the eggs.
  • Now we can go ahead and mix the dry ingredients and the wet ingredients.
  • Ensure that everything is evenly mixed and there are no lumps of batter caught in the wet ingredients.

Adding the Apples

Now that the batter is ready, we can combine the batter and the grated apples. Add all of the grated apples to the bowl and mix well so that they are evenly distributed.

Baking the Muffins

Let’s bake these delicious treats:

  • Preheat the oven to 375 degrees F.
  • Line a muffin tray with muffin liners.
  • Pour the batter equally into each of the liners.
  • Sprinkle 1/2 teaspoon of demerara sugar on each of the muffins. This adds an extra layer of crunch to the top of the muffins.
  • Bake for 25 – 30 minutes.
  • To check for readiness, stick a toothpick in the middle of one of the baked treats. If it comes out clean, then it’s ready to be enjoyed.

Storing Suggestions:

These delicious muffins don’t last too long in our house, so I generally make a double batch. They can last on a counter for up to 3 days if stored in an air tight container. However, if you want them to last longer, store them in the fridge in an air tight container for up to 1 week.

Reheating Suggestions:

I like to enjoy mine warm, and to do that, I toss them into a toaster oven for a couple of minutes. Remember to take the muffin paper liner off before you toss them into the toaster. Remove them from the toaster, cut them in halves, and add a dollop of butter to the middle. Trust me when I say, you will never go back to having cold muffins again.
