Gluten Free Cauliflower Mash with Sausage
My healthy, gluten free cauliflower mash with organic sausages and an onion and mushroom side is a perfect meal to impress the family with.
I love cauliflower mash. And I love the vegetable so much that I make all kinds of things with it such as pilau, cauliflower and potato curry (gobi alloo), stuffed Indian flat bread (gobi ka paratha), pickles, cauliflower pakora, gluten free cauliflower “pizza” crust, to name a few things. Cauliflower to me is like white gold. And I am not a big fan of mashed potatoes, so when I first discovered this mash, I was in heaven. I’ve never looked back and my family is now hooked.
The Ingredients for Gluten Free Cauliflower Mash
Making this mash is just as simple as mashing potatoes. If you can cut and boil a cauliflower, you can make the best mash there is.
Ingredients List for Gluten Free Cauliflower Mash:
- The mash
- 1 head of cauliflower
- 6 cups of water
- 3 cloves garlic
- 1/2 cup heavy cream (or milk)
- 2 tablespoons butter
- 2 tablespoons chopped chives
- 1 tablespoon onion powder
- 1/2 teaspoon dried red chili flakes
- Salt and pepper to taste
- Onions and mushrooms
- 1 large red onion
- 2 tablespoons vegetable oil
- 3 cups of sliced crimini mushrooms
- Salt and pepper to taste
- Sausages
- 4 organic gluten free sausages
- 2 tablespoons vegetable oil

The Cauliflower
Lets’s start with the cauliflower:
- Wash and cut a whole head into small chunks.
- Boil 6 cups of water in a large saucepan and toss your cauliflower into it.
- Boil it for about 10 mins or until it’s tender enough to fall apart when touched.
- Add about 1/2 teaspoon of salt to the water before you boil it. Adding salt ensures that the whole vegetable is seasoned right through. It doesn’t have a very strong flavour and tends to take on whatever flavour you throw in it.
- Drain all the water from the pan, but reserve 1/2 cup of the water. You will use it when you make the mash.
Making Gluten Free Cauliflower Mash
Once you drain all the water from the pot, using a potato masher, or a large fork mash the vegetable. Make sure that it’s completely mushy. Now on to flavouring it.
- Add 1/2 cup of heavy cream and 2 tablespoons of butter to the cauliflower and stir well.
- Slowly add the reserved water – one tablespoon at a time – till you get the consistency of choice. If you think the cream is enough, you don’t have to add the water.
- Add 1 tablespoon of onion powder, 2 tablespoons of chopped chives, 1/2 teaspoon of dried red chili flakes.
- Mix everything well and let cook for about 2-3 mins. This will ensure that the mash is well cooked and every bite is evenly flavoured.
Onion and Mushroom Side
Slice one large red onion and 3 cups worth of crimini mushrooms. Heat 2 tablespoons of oil in a medium pan. Add the mushrooms to the pan and cook for about 5 mins or until the onions get soft and start to brown a little.
Add all of the mushrooms to the pan and stir well. Continue to cook for another 5 mins or until the mushrooms have softened and start to brown a little. Add salt and pepper to taste.
The Gluten Free Sausages
Now for the sausages.
- Using a sharp knife, jab small holes into your organic gluten free sausages (or any sausages of your choice).
- I like the honey garlic chicken sausages best. I find the slight sweetness from the sausages helps the sausages brown really well. The sweetness also has a great contrast to the saltiness of the cauliflower mash and the onion mushroom mix.
- In a large pan, add 3 tablespoons of vegetable oil.
- Once the oil has heated a little, gently place the sausages into the pan.
- Let them cook for about 2 mins on each side for a total of about 8 – 10 mins. I like mine well done, but you can cook them to your own specifications.
Serving Suggestions for this Healthy Dinner
Once you have all three things ready to go, place 1/4 of the mash onto a dinner plate. Spread it so it covers most of the bottom of the plate. Place 1/4 of the onion mushroom mix onto the plate and place 1 sausage on the plate as well. Sprinkle with chopped chives and enjoy!

- Cauliflower mash
1 head of cauliflower

Directions
- Cauliflower mash
- Wash and cut the cauliflower into bite size pieces.
- Boil the cauliflower and garlic in the water for about 10 mins- and salt to the water before boiling. The cauliflower should be tender enough to break apart.
- Drain all the water out and reserve 1/2 a cup for later use. Discard the rest.
- Return the pan to the heat and using a potato masher, mash the cauliflower and garlic well so it’s really mushy.
- Add the cream and butter to the cauliflower and stir well. Slowly add the reserved cauliflower water till you get the consistency of choice.
- Add the onion powder, chives, dried chili flakes, salt, and pepper to the pan and stir well. Turn the heat to low and let the cauliflower cook mash for about 2-3 mins.
- Onion and mushroom
- Slice the onion and mushrooms into thin slices.
- In a medium frying pan, add the vegetable oil and then add the onions and cook for about 5 mins. Let the onions soften and start to brown.
- Add the mushrooms to the pan and continue cooking for another 5 mins or until the mushrooms start to soften and start to brown as well.
- Add salt and pepper to taste.
- Sausages
- Using a sharp knife, make small jabs into the sausages on two sides.
- Add the vegetable oil to a medium saucepan and let it get hot. Once it’s heated, add the sausages to the pan and let them cook for about 2 mins. Turn and cook on all sides evenly for a total of about 8-10 mins. You want to ensure the meat is cooked through.
- Serving
- Take 1/4 of the cauliflower mash and place it on a plate. Spread it a little to cover the bottom of the plate.
- Add 1 sausage to the plate and 1/4 of the onion and mushroom mix to the plate. Sprinkle some chopped chives on the plate and enjoy!
