One Pot Chicken with Cashew Nuts
My one pot cashew nut and red pepper chicken with spinach is delicate, bright, healthy, and hearty. It makes for an easy and delicious dinner.
Who doesn’t like one pot dinners? This one pot cashew nut and red pepper chicken dinner is so popular in our house. We all love it. The delicious sweetness of the pepper, the earthy nuttiness from the cashews, and the brightness of the spinach are all combined together to make this fantastic meal.
The Ingredients for One Pot Chicken
Some nuts, some fresh vegetables, some spices, some chicken and one pot is all it takes to make this delicious one pot dinner.
The Ingredients List:
- 1 large red pepper
- 3 garlic cloves
- 1/2 cup cashew nuts
- 3 tablespoons olive oil
- 1 red onion
- 1 cup spinach
- 8 chicken thighs
- 1 teaspoon paprika
- salt and pepper to taste
- parmesan cheese (optional)

The Peppers and Cashewnuts
I like to soak my cashew nuts so they get a little softer and easier to blend, but it’s not a necessary step. If you are doing that, then soak the cashew nuts in some water for about 10 minutes.
The Blending Process
Add the cashew nuts, 2 cloves of peeled garlic, and peppers to a food processor and blend them so you have a sort of smooth consistency. We don’t need any liquid for this since the peppers already have enough liquid in them. They provide enough moisture to blend everything with ease.
The Sauce for the One Pot Dinner
Once the peppers and nuts are ready, we can start the cooking process. Let’s start with making the sauce:
- Peel and chop the onions into small chunks.
- Peel and smash or finely chop the remaining garlic.
- Add the oil to a pan and add the onion and garlic to it.
- Cook it for about 3-4 minutes or until it starts to brown a little.
- While the onion is cooking, chop the chicken thighs into bite size pieces.
- Add the chicken to the pan and pour in the red pepper sauce.
Cooking the One Pot Chicken Dinner
Now that we have added the chicken to the pan, and poured in the red pepper sauce. Stir the sauce so that all of the chicken is covered with it. Allow the chicken to simmer in the sauce for about 10 or so minutes. Remember to stir it occasionally so that it cooks evenly.
When the chicken is almost done, we can add paprika and spinach. The spinach only takes a minute or so to wilt and that’s all we need to do. Once the spinach has wilted, remove the pan from the heat and allow it to sit for another minute before serving. Sprinkle some freshly grated parmesan on top of the chicken just before serving.
Serving Options for the One Pot Chicken
I love to serve this with a side of:
- plain rice
- toasted and well buttered bread
- garlic naan
Variations
I love this recipe because it’s so versatile. There are so many options to alter or vary it to one’s liking such as:
- replace the spinach with fresh kale or arugula. I love using arugula for this. It enhances the nutty and earthy flavour of the meal.
- replace the cashew nuts with blanched almonds or even almond meal. I find almonds provide a completely different flavour profile for this.
- I sometimes add fresh green olives to the meal – chop them into quarters. They provide a delicious saltiness to the chicken and give it more of a Mediterranean flavour.
- Try using this cashew nut and red pepper sauce chicken on pasta. It will be a perfect meal for the whole family.
