  • 1/2 cup unsalted room-temperature butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup macadamia nuts

The Flour for the Macadamia Nut Cookies

Let’s get the flour ready.

  • Add 1 and 1/4 cups of flour to a small bowl.
  • To that add 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda.
  • Then add 1 tablespoon of cornstarch.
  • Finally, add 1/4 teaspoon of salt.
  • Mix them all so everything is evenly distributed and set it aside.

The Butter and Sugar

Let’s get the cookie dough started.

  • Add 1/2 cup of softened unsalted butter and 3/4 cup of sugar to a bowl.
  • I use a stand mixer, but you can use a bowl and whisk as well.
  • Whisk them until the sugar has dissolved – about 2 minutes.
  • Then add 1 whole egg and 1 teaspoon of pure vanilla extract.
  • Mix them in.

Making the Macadamia Nut Cookie Dough

Now that we have the butter mixture, we can get the cookie dough going.

  • Add the flour mixture we had set aside to the butter mixture.
  • Gently mix it in – just so the flour is mixed in. Do not over-mix.

Adding the Chocolate Chips and Nuts

Finally, we are ready to add the chocolate chips and nuts.

  • To the batter, add 1 cup of white chocolate chips.
  • Then add 3/4 cup of macadamia nuts.
  • Fold them into the dough.
  • At this point, it will feel like you have too many chips and nuts, but they will be just perfectly distributed when you bake the cookies.

Baking the White Chocolate Chip Macadamia Nut Cookies

We have our cookie dough ready, so let’s get baking.

  • Preheat the oven to 350 degrees F.
  • Line 2 baking trays with parchment paper.
  • I like to scrunch up the paper, so it stays in place.
  • Using a spoon, scoop about 2 tablespoons worth of cookie dough into your hands. Using your hands, roll the cookie dough into 24 cookies – about 1 and 1/2 inches each.
  • Bake them on the middle rack for about 12 – 13 minutes or until they start to brown a little.

Once baked, allow them to cool on the baking tray for about 5 minutes. Then transfer them to a cookie rack, and allow them to cool completely.

Storing the Macadamia Nut Cookies

You can store the baked cookies in an air-tight container for up to 4 days on the counter.

If you want to freeze the dough, make the cookie dough and freeze it in an air-tight container for up to 3 months. Defrost the dough in the fridge overnight and then bake and enjoy.
