Healthy Carrot Apple Muffins

I love these healthy carrot apple muffins. They are one of my favourites and are so easy to put together. My kids love these and often ask for them. I add a little shredded coconut to them for added texture and flavour. They are chock full of fiber too. Once you try them, you will keep coming back for more.

The Ingredients for Carrot Apple Muffins

The usual muffin ingredients with one exception – no butter, but olive oil in its place. Add some apples and some carrots and we have a champion muffin.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 2/3 cup olive oil
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 apple (1 and 1/4 cups)
  • 2 carrots (1 and 3/4 cups)
  • 1/2 cup toasted walnuts
  • 1/2 cup unsweetened shredded coconut

The Dry Ingredients

Let’s start with getting the dry ingredients ready.

  • In a small mixing bowl, add 1 cup (120 Grams) of all-purpose flour, 1 cup (120 grams) of whole wheat flour, 2 teaspoons of baking soda, and 1 teaspoon of ground cinnamon.
  • Mix them all well together so everything is evenly distributed into the flour.
  • Set the bowl aside for later use.

The Wet Ingredients for the Carrot Apple Muffins

Next comes the wet ingredients for the muffins.

  • Add 2/3 cup (157 milliliters) of olive oil to a large mixing bowl.
  • To the bowl, add 3/4 cup (150 grams) of sugar.
  • Using a whisk mix them together until the sugar has dissolved.
  • Add 3 whole eggs to the bowl and whisk them into the oil mixture.
  • Add 1 teaspoon of vanilla extract and mix it in well.

Making the Muffin Batter

Let’s get the muffin batter ready.

  • Add 1/2 cup (50 grams) of unsweetened shredded coconut to the bowl along with the dry ingredients (flour mixture) to the bowl with the wet ingredients.
  • Mix everything well so you have a batter.
  • Next, let’s grate and add 1 and 3/4 cups (250 grams) of carrots and add them to the batter.
  • Let’s grate and add 1 and 1/4 cups (140 grams) apples to the batter as well.
  • Add 1/2 a cup (50 grams) of walnuts to the bowl too.
  • Mix everything in so all the carrots and apples are evenly distributed into the batter.

Baking the Healthy Carrot Apple Muffins

We are now ready to bake the muffins.

  • Preheat the oven to 350 degrees F (177 C).
  • Line a muffin tray with liners.
  • Using two spoons, add the muffin mixture into each liner.
  • Fill the liners all the way to the top.
  • Bake the muffins for 30-35 minutes.
  • Check for readiness by inserting a toothpick into the muffin. If it comes out clean, the muffins are ready.

Storing and Enjoying the Muffins

Now that our muffins are ready, we are ready to enjoy them.

  • Allow the muffins to cool down completely before enjoying them.
  • Once they are cooled, they can be stored on the counter for up to 3 days.
  • Store them in the fridge for up to 5 days in an air-tight container.

What makes carrot apple muffins healthy?

My apple carrot muffins are made healthy since they are made with a whole lot of apples, carrots, and shredded coconut. Also, they are made with olive oil in place of butter.

Can I freeze carrot apple muffins?

The batter for my healthy apple carrot muffins can be stored in the freezer for up to 2 months. Defrost the batter overnight in the fridge and base as always. It’s best not to freeze the premade muffins. Freezing them tends to dry them out.

Can I replace the apples in the carrot apple muffins?

Yes! In place of apples, try using pears. Pears add a delicious flavour to the muffins and are just as moist.
