Peanut Butter Chocolate Oat Clusters

With the irresistible combination of chocolate, peanut butter, and oats, these clusters will surely be a hit with the whole family.

My family loves these Chocolate Oat Clusters. They ask for me to make them so often that I feel they might get bored of them. But that is yet to happen. These are a must-have on our Christmas / Holiday platter. They make a great edible gift and can be shared at any potluck.

Some cocoa powder, some sugar, some butter, and some milk. This will give you the most delicious fudgy base you will need for these chocolate oat clusters.

  • 1/2 cup butter
  • 2 cups sugar
  • 1/4 cup cocoa powder
  • 1/2 cup milk
  • 1 cup peanut butter
  • 1 tsp vanilla
  • 3 1/4 cups oats
  • coarse salt for sprinkling

The Chocolate Mix

Let’s start with the chocolate mix base.

  • Add 1 stick (1/2 cup) of unsalted butter to a large heavy-based pan. I use room temperature butter and I cut it into cubes. It helps the butter melt faster.
  • Next, add 1 cup of granulated sugar.
  • Then comes 1/4 cup of cocoa powder.
  • And finally, add 1/2 cup of milk.

Cooking the Chocolate Mix

Now that we have all the ingredients in the pan, we can get going.

  • Place the pan on medium heat and mix everything together.
  • Continue to mix until the butter has melted.
  • Now, we need to allow the chocolatey mixture to cook and bubble for 2 more minutes. This makes the chocolatey mixture gooey and fudgy.

Add the Peanut Butter

Once the chocolatey mixture is ready, we can move on.

  • Now that the mixture has cooked for 2 minutes, remove the pan from the heat.
  • Right away, add 1 cup of peanut butter. I add chunky peanut butter because it helps make the clusters more nutty tasting. Each bite will have some bits of peanuts in it.
  • Also, add 1 teaspoon of pure vanilla extract at the same time.
  • Mix them both into the chocolatey mix.

Adding the Oats to the Mix

We are now ready to add the oats.

  • Now that everything is melted and ready, we can add the oats.
  • Add 3 cups of oats to the pan. You can use rolled oats or quick-cook oats; either will work in this recipe.
  • Mix the oats into the mix. If the mixture is still soft, add another 1/4 cup of oats as needed. This will depend on the consistency of your peanut butter.

Making the Oat Clusters

Now that we have the oat cluster mixture ready, we can finally make them.

  • Line a baking tray or a counter space with parchment paper.
  • Using 2 spoons place about 1 tablespoon full of the mixture onto the parchment paper.
  • Continue to do that until you have all the mixture on the parchment paper.
  • Sprinkle some coarse salt on each (optional). I find this really brings out the chocolatey flavour.
  • Allow them to cool down completely before enjoying them.

Storing the Chocolate Oat Clusters

Although these chocolate oat clusters barely last in our house, they can be stored in an air-tight container on the counter for up to 1 week. I tend to double the recipe, so I can share them with friends and family. If you do that, you can keep them in the fridge for up to 1 month.

Variations for Chocolate Oat Clusters

I have tried to make these with the following variations.

  • If you like nuts, you can always add 1/4 cup of toasted chopped nuts to the mixture.
  • Replace the milk with milk of your choice. I have made them with almond milk, oat milk, and even cashew milk.
  • If you don’t like butter, replace it with margarine.
  • Make them vegan by replacing the butter with coconut oil. Use 1/2 a cup of coconut oil. And use non-dairy milk in place of cow’s milk.

Ingredients

  • 1/2 cup butter

  • 2 cups sugar

  • 1/4 cup cocoa powder

  • 1/2 cup milk

  • 1 cup peanut butter

  • 1 tsp vanilla

  • 3 and 1/4 cups oats

  • coarse salt for sprinkling

Directions

  • Add the butter, sugar, cocoa powder, and milk in a large heavy bottom pan.
  • Heat it until the butter melts.
  • Continue to cook until it boils.
  • Boil the mixture for a further 2 minutes.
  • Remove from the heat and add peanut butter and vanilla.
  • Mix the peanut butter in.
  • Add the oats and mix so they are evenly distributed.
  • Using 2 spoons, make into clusters and place on a parchment paper.
  • Allow to cool down completely before enjoying.

Can I add nuts to my Chocolate Oat Clusters?

Yes! I love adding nuts to my chocolate oat clusters. If adding nuts, reduce the amount of nuts by 1/4 cup and add 1/2 cup of toasted chopped nuts of choice.

Can I make vegan chocolate oat clusters?

Yes, you can make these into vegan chocolate oat clusters. You can replace the butter with coconut oil. And cow’s milk with non-dairy milk of choice.

Can I store chocolate oat clusters in the fridge?

My chocolate oat clusters can be stored in the fridge for up to 1 month. Make sure to keep them in an air-tight container and allow them to come to room temp before enjoying. They taste just as good cold, though.
