Banana bread has always been a favourite of mine. The moist, delicious interior with a slightly crisp crust makes my mouth water every time I think about it. I love having it when it’s still slightly warm and the chocolate chips are slightly melty and fudgy tasting. Indulge in the delightful flavors and see for yourself.

The ingredients for this bread are very similar to any cake, with the addition of bananas.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 and 1/2 cups mashed ripe bananas (about 3 bananas)
  • 2 eggs
  • 1/3 cup neutral oil
  • 1/4 cup milk
  • 1/2 cup chopped toasted pecans
  • 1/2 cup semi-sweet chocolate or dark chocolate chips

The Dry Ingredients for Banana Bread

The first step to getting the delicious bread is to start putting the dry ingredients together.

  • In a small mixing bowl, add 2 cups of all-purpose flour.
  • Next, add 2 teaspoons of baking powder.
  • Add 1 cup of packed brown sugar.
  • Then add 1/2 teaspoon of cinnamon and 1/4 teaspoon of salt.
  • Mix all of them until all the ingredients are well combined.
  • Set the mixture aside while you prep the rest.

The Bananas for Banana Bread

Banana bread tastes best when made with over-ripe bananas. I use them when they are starting to blacken a little.

  • Add 3 over-ripe bananas to a large mixing bowl.
  • Using a fork mash them to a pulp.
  • Add 2 whole eggs to the bowl and mix them into the bananas well.
  • Add 1/3 cup of neutral oil and 1/4 cup of milk into the bowl.
  • Mix those in well.

Mixing the Dry and Wet Ingredients

Now that the wet ingredients are ready, we can add the dry ingredients to it.

  • Add the flour mixture that we had set aside to the wet ingredients.
  • Using a spatula, mix the flour in well so it’s combined.
  • Do not over-mix the flour.

Adding the Nuts and Chocolate Chips

Once the flour is mixed in, add

  • 1/4 a cup of chopped walnuts to the batter.
  • and add 1/2 cup of dark chocolate chips to the batter too.
  • Mix them both in so they are evenly distributed.
  • Again, do not over mix the batter.

Baking the Banana Bread with Chocolate Chips

Let’s get the banana bread baked so we can enjoy it.

  • Preheat the oven to 350 degrees F.
  • Line a 9in x 4 inc bread baking dish with parchment paper.
  • Pour the batter into the baking dish.
  • Gently lift and tap the dish on the counter to remove any air bubbles that might have formed during the pour.
  • Bake for 1 hour and 10 minutes.
  • Remove from the oven and test for readiness.

Cooling and Enjoying the Bread

Once the bread is baked, it needs to cool down completely before we can enjoy it.

  • Allow the banana bread to cool down for 10 minutes in the baking dish.
  • Then remove it onto a cookie rack and allow it to cool down completely.
  • Once cooled down, slice it to a thickness of choice and enjoy!

Yes, I often use frozen bananas for my banana bread. Remove them from the freeze and allow them to thaw before using. Alternatively, use a blender to blend the frozen bananas before using them. Just ensure they are not frozen when you use or your banana bread will not be very soft.

What kind of nuts can I add to banana bread?

I generally use walnut bits for my banana bread, but you can use pecan bits, chopped almonds, pistachios, or even macadamia nuts. Any kind of nut goes well with banana bread.

What makes banana bread moist?

When making banana bread, the batter should not be over-mixed. The less you mix the batter, the softer the bread will be. Over-mixing the batter makes the bread chewy since it releases the gluten in the flour. Once you mix the wet and dry ingredients, ensure you are mixing just enough so the dough is roughly mixed.
