My apple oatmeal cookies are hearty, healthy, full of fiber and in addition made with all kinds of natural ingredients. They are made with no oil, no eggs, no flour, but are filled with gluten free and vegan ingredients instead. Try them once and you will never go back to making cookies with flour.

- 1 and 3/4 cups rolled oats
- 1/4 cup coconut sugar
- 1 cup walnuts
- 1/2 cup raisins
- 1/2 cup almond butter
- 1 apple
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla

The Apples for Apple Oatmeal Cookies
Let’s get started with the dry ingredients.
- Add 1 and 3/4 cups of oatmeal to a food processor.
- Then add 1 cup of pecans.
- 1/2 a cup of coconut sugar.
- And then 1/2 a cup of raisins.
Adding the Apple to the Apple Oatmeal Cookies
Apples bring a delicious sweetness to these cookies.
- Core and cut 1 apple into bite size pieces.
- I use a sweet gala apple because I find that has a lot of moisture and natural sweetness.
The First Blend for the Apple Oatmeal Cookies
The dough for these cookies needs to be blended twice.
- Cover and blend for 1 minute.
- Open and add 1 teaspoon of baking powder and 1/4 teaspoon of baking soda.
- Then add 1 teaspoon of pure vanilla extract.
- And finally add 1/2 a cup of nut butter of choice.
- Cover and blend again for a further 1 minute. Do not over-blend. We want to have a granular dough. This gives the cookie a better consistency.
Baking the Apple Oatmeal Cookies
Let’s get the cookies baked.
- Preheat the oven to 350 degrees F.
- Line 2 baking trays with parchment paper. I add a drop of oil on each corners of the baking tray in order to keep the parchment from moving around.
- Using a small ice cream scoop, place the dough onto the baking tray.
- Bake for 18-20 minutes on the middle rack.
Storing Suggestions
- These cookies can last for up to 2 weeks in the fridge if stored in an air tight container.
- The cookies dough can be frozen for up to 2 months. Defrost overnight in the fridge and mix the dough before making the cookies.
Substitute Options for Apple Oatmeal Cookies
Let’s talk about substitutions.
- There are so many types of nut butters that we can use. I have made these with almond butter, cashew butter, and natural peanut butter. Each one of them gives the cookies a unique flavour.
- I use gala apples, but there are so many sweet apples tht can be used, such as red delicious, fiji, ambrosia, to name a few.
- Replace the raisins with dates, or even prunes.
- Don’t like pecans, you can certainly replace them with walnuts or even almonds.
