The Shrimp
For this recipe, I use Tiger Shrimp. I like to peel them but keep the tails on. I find it makes the recipe a little more interesting with the tails still on the shrimp. If using frozen shrimp, make sure to thaw them overnight in the fridge. Set them aside as you prep the rest of the ingredients.
The Garlic Butter
Let’s start with cooking the garlic and chili.
- Finely chop 3 garlic cloves and 1 red chili.
- In a medium sized pan, add 3 tablespoons of olive oil and 3 tablespoons of butter. You can always add more butter if you like it more buttery or skip the oil altogether.
- Bring the heat to medium and melt the butter.
- Once it’s melted, add the garlic and chili to it.
- Cook them for about 3-4 minutes or just until the garlic starts to brown.
Cooking the Garlic Shrimp
Now that the garlic is ready, we can cook the shrimp.
- Add the peeled garlic to the pan and toss it around for 1 minute.
- Add fresh ground black pepper to the pan and continue to toss or mix.
- Add the juice of 1/2 a lemon and toss.
- Cook for a total of 3 minutes and then promptly remove the pan from the heat.
- The shrimp should have turned red by now and curled up a little. This means they are just perfect and should not be cooked anymore.
Serving Suggestions
I love to serve the shrimp warm and with a sprinkling of fresh coriander on it. I serve it with a side of:
- Soft cooked creamy polenta. The shrimp are just perfect when served on top of a creamy base.
- My cauliflower mash. It is yet another creamy delicious base for the garlic shrimp.
- Another one of my favourites. My Cauliflower and Brussels sprout rice.
- Or even on top of a creamy pasta dish.
