  • 1 1/2 cups cooked chickpeas (1 can)
  • 1/4 English cucumber
  • 1/2 sweet bell pepper
  • 1/2 cup cherry tomatoes
  • 1/2 red onion
  • 1 garlic clove
  • 1/2 lemon
  • 1 tablespoon maple syrup
  • 1/2 teaspoon of salt (or to taste)
  • 1/4 teaspoon of black pepper (or to taste)
  • 1/4 cup olive oil
  • 1/4 cup green olives
  • 1/2 cup chopped parsley
  • 1/4 cup feta

The Vegetables for the Mediterranean Chickpea Salad

Let’s get started with the vegetables for the salad.

  • Let’s chop 1/4 an English cucumber and set it aside.
  • Then, chop 1/2 a sweet bell pepper and put it aside.
  • Quarter 1/2 a cup of cherry tomatoes, place them in a bowl and set them aside.
  • Slice 1/2 an onion and set it aside.
  • Finally, finely chop 1/4 cup of parsley and set it aside as well.

The Dressing for the Mediterranean Chickpea Salad

Let’s get the dressing done next.

  • Using a garlic press, crush 1 large garlic clove directly into a salad bowl. You can use a knife as well.
  • Next, add the juice of 1/2 a lemon (or 1 lime) to the bowl.
  • Then, add 1 tablespoon of maple syrup.
  • Add salt and pepper to taste. I add 1/2 a teaspoon of salt and 1/4 teaspoon of black pepper.
  • Start whisking everything together. While you are whisking, pour 1/4 a cup of olive oil and continue to whisk until you have a smooth consistency.

Making the Mediterranean Chickpea Salad

Let’s get the Mediterranean chickpea salad ready to enjoy.

  • To the salad dressing, add 1 and 1/2 cups of boiled chickpeas. I boil my own, but you can use 1 can of store bought boiled chickpeas.
  • Then, add the chopped cucumber, chopped bell pepper, the cherry tomatoes, and the sliced onions.
  • Mix them all and set the salad bowl aside for about 10 minutes.
  • Then, add the chopped parsley and the green olives. I chop my olives into quarters, but you can slice them too.
  • I add 1/4 cup of feta, but you can skip that if you want a vegan version.
  • Mix everything and enjoy!

Storing Suggestions for the Mediterranean Chickpea Salad

Now that we have our delicious salad ready, we can either enjoy it right away, or we can store it in an air-tight container and place it in the fridge for up to 4 days. I make-ahead a large portion of this and give it to my university-going daughter. She enjoys it over the days and loves getting it from time to time.

If making it ahead, try to keep the chopped parsley out. Add it when you are ready to enjoy the salad. That keeps the salad fresher, since greens tend to get soggy quickly and go bad.

Variations to the Mediterranean Chickpea Salad

There are a few things you can vary for this salad.

  • If you don’t like raw onions in your salad, you can quick pickle them or use store-bought pickled onions.
  • Try replacing the green olives with black olives.
  • Add other fresh herbs such as fresh dill, or mint. These fresh herbs will give your salad a completely different flavour profile.

Ingredients

  • 1/4 English cucumber

  • 1/2 sweet bell pepper

  • 1/2 cup cherry tomatoes

  • 1/2 red onion

  • 1/2 cup chopped parsley

  • 1 1/2 cups cooked chickpeas (1 can)

  • 1/4 cup green olives

  • 1/4 cup feta

  • 1 garlic clove

  • 1/2 lemon

Directions

  • Chop the English cucumber, red pepper, and cherry tomato into bite-size pieces. Set them aside
  • Slice the onion thinly and set it aside.
  • Finely chop the parsley and set it aside.
  • Add one crushed garlic, 1 tablespoon of maple syrup, juice of 1/2 a lemon, salt and pepper to taste in a salad bowl.
  • Using a small whisk or fork, mix them together.
  • As you are mixing, pour the olive oil in and continue to mix to make a dressing.
  • To the dressing, add the cooked chickpeas. If you are using canned chickpeas, make sure to rinse and drain them properly before adding to the bowl.
  • Next, add the chopped cucumber, red pepper, tomatoes, sliced onions, and green olives.
  • Mix them all and set the bowl aside for 10 minutes.
  • Once rested, add the parsley and mix it in.
  • Finally, add the feta and mix that in. (Skip for a vegan version).
  • Enjoy!
