These left over lentil crackers are a smart solution to using leftovers and make for a perfect snack option that the whole family will love. Whether you pair them with dips, or cheese, or enjoy them on their own, they’re bound to be a hit! I always have some of these crackers lying around in my kitchen.

Left over lentils make great crackers. Just add a couple of additional ingredients and you have a delicious cracker.

  • 1 cup left over cooked lentils
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons black sesame seeds
  • 3/4 cup gluten free flour

Making the Dough

Let’s start with making the dough.

  • Add 1 cup of left over lentil crackers to a large bowl.
  • Let’s add 1/2 teaspoon each of crushed black pepper and salt.
  • I love sesame seeds, so I add 2 tablespoons of sesame seeds. I use black sesame seeds because they have a good contrast to the yellow colour of the crackers.
  • Finally, add 3/4 cup of gluten free flour of choice.
  • Using a spatula or your hands, mix everything together to form a dough.

Kneading the Left Over Lentil Cracker Dough

Time to knead the dough.

  • Sprinkle some flour onto a counter.
  • Pour the dough on top of the flour.
  • Knead the dough until you have a smooth consistency.
  • I knead it for about 3-5 minutes.
  • Sprinkle more flour if your mixture is too loose. This will depend on the consistency of your left over lentils.

Cutting the Left Over Lentil Crackers

Let’s get the dough transformed into crackers.

  • Sprinkle some flour on one side of the dough.
  • Flip and sprinkle more on the other side.
  • Roll the dough into a 15 inch x 15 inch squarish shape using a rolling pin. The rolled shape does not matter, since we will be cutting the dough into squares.
  • Using a shape knife or a pizza cutter, cut the dough into 2 inch square shapes or crackers.
  • I sometimes change it up and cut them into 4 inch strips instead of crackers. You can make these shapes of choice.

Baking the Left Over Lentil Crackers

Time to bake the crackers.

  • Preheat the oven to 375 degrees F.
  • Line 3 baking trays with parchment paper.
  • Using a spatula, gently lift the crackers and place them onto the baking tray.
  • Bake them for 15 minutes or until they start to brown a little.
  • Remove the trays from the oven and allow the crackers to cool down on the baking tray for 2 minutes.
  • Then lift them and place them onto a cookie rack and allow them to cool down completely before enjoying them.

Storing and Substitute Suggestions

I store these crackers in an air tight container on the counter for up to 1 month. They are absolutely delicious when served with some humus, my red pepper dip, or even my cranberry salsa.

I have tried making these crackers with so many types of lentils.

  • Try replacing the sesame seeds with sun flower seeds. They add a delicious nuttiness to the crackers.
  • Make them a little spicy by adding a spoonful of garlic chili sauce to the dough mixture.
  • Add a hint of rosemary to give them a completely different flavour profile.
  • I love adding crispy fried red onions to the dough. This gives the crackers a whole different flavour and texture.

Ingredients

  • 1 cup left over cooked lentils

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 2 tablespoons black sesame seeds

  • 3/4 cup gluten free flour

Directions

  • Preheat the oven to 375 degrees F
  • Add all of the ingredients into a bowl and mix to form a dough.
  • Sprinkle some flour on the countertop and pour the dough onto the counter.
  • Knead the dough using both hands until the dough is smooth – about 5 minutes.
  • Roll the dough into a squarish shape about 1/2 cm thick using a rolling pin.
  • Cut the dough into 2 inch squares using a pizza cutter or a sharp knife.
  • Line 2 baking trays with parchment paper.
  • Lift the cut crackers onto the lined tray.
  • Bake for 15 minutes or until the crackers start to brown a little.
  • Allow to cool on the baking tray for 2 minutes, then move to a cookie rack and allow to cool completely.
  • Enjoy once cooled.
