Bean Mango and Avocado Salad
My healthy and delicious bean mango and avocado salad is an easy 10-minute recipe, perfect for anyone looking for a quick and nutritious meal.
This vegetarian bean mango and avocado salad recipe will entice you to eat more beans. This is one of our favourite salads during the summer months when we have an abundance of mangoes. A healthy salad choice for plant-based and vegan eaters. It’s great for kids too. Make it and enjoy it with the whole family.

Some beans, some fruits, some herbs and you have a delicious and healthy salad that you will love.

- 2 cups cooked black beans
- 1 ripe mango
- 1/2 cucumber (1 cup)
- 1 red pepper (1 cup)
- 1/2 red onion
- 1 lime
- 1 tablespoon maple syrup
- 4 tablespoons olive oil
- salt and pepper to taste
- 1 avocado
- 1/4 cup cilantro
- 2 green onions

Prepping the Vegetables and Fruits
Let’s start with prepping the vegetables and fruits that will go into our salad.
- Finely chop 1/2 a red onion.
- Then finely chop 1 red pepper (about 1 cup worth). Orange or yellow pepper will work too.
- Next chop 1/2 an English cucumber (about 1 cup worth).
- Peel and chop 1 semi-ripe mango into small pieces.
- Let’s also chop 2 green onions (scallions) and 1/2 a cup of cilantro. You can also use parsley if you prefer that to cilantro.
Assembling the Bean Mango and Avocado Salad
Let’s get this salad ready to enjoy.
- Add 2 cups of boiled black beans to a salad bowl.
- Add the chopped onion, red pepper, cucumber, and mango.
- Add salt and pepper to taste. I add 1/2 a teaspoon of each.
- Mix well so everything is evenly distributed.
- Next, let’s add the juice of 1 lime, 1 tablespoon of maple syrup, and 4 tablespoons of olive oil. Mix well so that all the beans and vegetables are well coated.
The Avocado, Green Onions and Cilantro
Lastly, we can add the avocado, green onions, and cilantro.
- Add all three of the chopped things and mix everything well.
- Be gentle so that you don’t break the avocado up.
- Taste and adjust for salt, lime, and maple syrup if needed.
Storage Suggestions
This bean mango and avocado salad can be stored in an air tight container in the fridge for up to 2 days. If you store it for longer than that, the mango and the avocado will start to go bad and not taste very good.
Tips
Here are a few suggestions that I have:
- I try and boil my beans, but when I am in a rush and use canned beans, I buy the no-salt-added beans. That way, you can control the amount of salt that goes into the beans.
- Generally, it’s best to use fresh mangoes, but if you don’t have any, you can always use frozen. If you use frozen mangoes, allow them to thaw before adding them to the salad.

Directions
- Finely chop the onion, red pepper, cucumber, and mango.
- Also, chop the green onion and cilantro.
- Add the cooked beans to a salad bowl.
- Add the chopped onion, red pepper, cucumber, and mango to the bowl.

- Squeeze the juice of the whole lime into the bowl.
- Add the maple syrup and olive oil to the bowl as well.
- Mix everything well so that everything is well coated.
