The Butter and Sugar
Let’s start with the butter and sugar mixture.
- Softened 1 cup of butter. I generally put it in the microwave for a few seconds to get it soft. This helps hasten the whole process.
- Add 2 cups of granulated sugar to the butter.
- Using a whisk, mix them until the sugar has dissolved and the butter is fluffy – about 3-4 minutes.
The Cocoa Powder and Eggs
We are now ready to add the cocoa powder.
- Add 1 cup of cocoa powder to the butter. I like to sift the cocoa before I add it to the butter. This ensures that there are no lumps in the batter and brownies.
- Mix the cocoa powder well so it’s evenly distributed into the butter.
- Add 1 teaspoon of vanilla and 1/2 teaspoon of salt to the mix. Salt brings out flavours, so it’s always a good thing to add to baking.
- Mix both things in well.
- Add 4 eggs to the mix. I add the eggs one at a time and continue to whip as I add them.
- I also use room-temperature eggs. They help ensure the softened butter does not clump up.
The Flour
Now that we have everything mixed up, we can add the flour mix to the chocolatey butter mix.
- Add 1 tablespoon of baking powder to 2 cups of flour and mix them together.
- Add this mixture to the chocolate mix.
- Combine so all the flour is evenly distributed and you don’t see any white.
- Add 1 cup of toasted pecans (optional) to the brownie mix and ensure they too are evenly distributed.
Baking the Fudgy Brownies
Ready to bake and enjoy the fudgy brownies? Well, I am. So, let’s get that done.
- Preheat the oven to 350 degrees F.
- Butter a 9×13 inch baking dish. Remember to go all around the sides too.
- Pour the brownie mixture into the baking dish and using a spatula spread it around evenly.
- Bake the brownies for 30 minutes.
- Stick a thin knife in the center to ensure it has baked through. If the knife comes out clean, then the brownies are ready.
- Allow them to cool in the baking dish for about 5 minutes. Then slide the knife all around to loosen the brownies from the baking dish.
- Allow them to cool down completely on a cookie rack and then slice it into 36 pieces.

Fudgy brownies generally have more butter than non-fudgy ones. The more butter you add to the batter, the fudgier they will be.
Soft butter is what you want to use for fudgy brownies. If you use melted butter, the texture of the brownies will change.
Fudgy brownie batter should be gooey and dark. A sticky consistency ensures moist, rich and fudgy brownies. In order to get this consistency, it’s important to sift the cocoa powder so there are no lumps in it and no lumps in the batter.
