The Dry Masala
The first step to making this easy 10-minute recipe is the masala mix.
- Add 2 tablespoons of Kashmiri chili powder to a bowl. Kashmiri chili powder is quite spicy, so for a less spicy version, you can use Paprika or a mix of both.
- To it add 1 teaspoon of turmeric powder.
- Next comes 1 teaspoon of cumin powder.
- And then 1/2 teaspoon of coriander powder.
- 1 tablespoon of garam masala comes next.
- And finally, salt and pepper to taste. I add about 1 teaspoon of salt and 1/4 teaspoon of black pepper.
- Mix everything well together and set it aside.
The Fish
I like to use Tilapia for my recipe, but all kinds of fish work with this recipe. Try it with Cod, Salmon, Tuna, or any other fish of choice.
- Using a paper towel, pat dry the fish so there isn’t too much moisture on the fish.
- Add about 3/4 tablespoon of the dry masala mix onto one side and spread it all over.
- Flip the fish and, add another 3/4 tablespoon of masala and spread it all over.
- Repeat until you have all 4 fillets covered in masala.
- Set the fish aside.
The Onion and Garlic
Let’s get the onion and garlic going.
- Finely chop one small red onion.
- And finely chop or crush 3 cloves of garlic.
- Add 3 tablespoons of vegetable oil to a pan.
- Once the oil is heated, add the onion and garlic to the pan.
- Cook for about 2-3 minutes or until the onion softens a little. Do not overcook the onion because it will continue to cook as the fish cooks.
Putting the Masala Fish Fry Together
Now that we have everything ready, we can put our masala fish fry together.
- Lift the fish and add it to the pan.
- If your pan isn’t large enough for all 4 fillets, remove half the onion and set aside. Cook 2 fillets first and remove. Then add the onion back and cook the other 2 fillets.
- Cook for 3 minutes on one side.
- Flip and cook for 3 minutes on the second side.
- Remove from pan and server immediately.
