Ultimate Brown Butter Cookies

My ultimate brown butter cookies take no time to make, are filled with chocolate chips, are totally addictive, and will become your go-to. And best of all, you don’t need a stand mixer.

I remember the first time I tried brown butter cookies. They were heavenly. The nutty flavour had me wanting more and one just wasn’t cutting it. Funnily enough, growing up, my mom would make ghee (clarified butter) at home and you make that by cooking down butter. The smell of browning butter takes me back to Mom’s kitchen. And anything that makes us nostalgic has got to be good, right?

Ingredients List

  • 1 and 3/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup chocolate chips

How do we make The Brown Butter?

The first step to making my ultimate brown butter cookies is the brown butter. This is a crucial step, and can not be skipped.

  • Add 1 cup of butter to a pan and turn the heat up to medium.
  • Allow the butter to melt and start to boil.
  • Continue to cook for 7-8 minutes.
  • The butter will start to bubble as it starts to brown.
  • You will be able to smell the delicious nutty flavour. At this point, turn the heat off and take the pan off the heat.

The Sugars for the Cookies

Now that we have the brown butter ready, we can add the sugars to it.

  • While the butter is still hot, add 1/2 a teaspoon of salt, 1/2 a cup of white sugar, and 3/4 cup of brown sugar to the pan.
  • Mix well so that the sugars melt and mix into the butter.
  • This will smell like a delicious caramel.
  • Allow the mixture to cool down completely.
  • Once cooled down, add 2 whipped eggs to the butter mixture and set it aside.

The Dry Ingredients

Time to get the dry ingredients ready.

  • Add 1 and 3/4 cups of all purpose flour to a large bowl.
  • Add 1/2 teaspoon of baking soda to the bowl and mix.

The Cookie Dough

Now we can add the wet ingredients to the dry.

  • Pour the butter mixture into the dry ingredients.
  • Using a spatula, mix well so you have a cookie dough.
  • Add 3/4 cup of chocolate chips or chunks or a combination of both. I use semi sweet chips and chunks since the cookie dough is sweet enough. on it’s own.

Baking the Brown Butter Cookies

Our cookie dough is ready and we are ready to bake the cookies.

  • Preheat the oven to 375 degrees F.
  • Line 2 baking trays with parchment paper.
  • Using an ice cream scoop, make cookies and place them on the parchment lined trays. Using a scoop ensures for even sized cookies.
  • Bake them on the middle rack for 12-14 minutes.
  • Remove them from the oven, and transfer them to a cookie rack, and allow them to cool down completely before serving.

Storing Suggestion

The cookies can be stored on the counter in an air tight container for up to 5 days. You can save them in the fridge for up to 10 days.

Ingredients

  • 1 cup unsalted butter

  • 1/2 teaspoon salt

  • 1/2 cup granulated sugar

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 and 3/4 cups all purpose flour

  • 1/2 teaspoon baking soda

  • 3/4 cup chocolate chips

Directions

  • Preheat the oven to 375 degrees F.
  • Add the butter to a pan.
  • Turn the heat on to medium and allow the butter to come to a boil.
  • Continue to cook the butter for 7-8 minutes.
  • The butter will start to get foamy as it browns and will smell nutty.
  • Take it off the heat and add the salt, brown sugar, granulated sugar, and vanilla extract. Mix them all together.
  • Allow the butter mixture to cool down completely.
  • Once cooled, whisk the eggs and add them to the butter mixture. Set it aside.
  • In a large bowl, add the all purpose flour and baking soda.
  • Add the butter mixture to the bowl and make a cookie dough.
  • Add the chocolate cookies and mix them in.
  • Line 2 baking trays with parchment paper.
  • Make cookies using an ice cream scoop.
  • Bake them on the middle rack for 12-14 minutes.
  • Remove from the oven and cool them on a cookie rack before enjoying.
